You can use a program called Paint (Microsoft XP version 5.1) to prevent viewers from seeing sensitive data such as staff names, email addresses or project information on images and screenshots that you may be including within presentations or documentation.

These walk-through instructions available through the online Knowledge Base explain how to obscure data using this program when working in Windows XP. Instructions are similar if you use Windows 7, but the appearance may vary slightly.
